Basic Overnight Oats

~ 1cup of rolled oats

~ 1/2 box of fresh milk

~ drops of vanilla essence

~ dashes of cinnamon powder

~ a table spoon of black raisins

All mixed in a mug or container and put in the fridge over night. Before eating, you can add honey & roasted almond slivers/flakes. Fruits too if you like.

Kimchi by Liza Hashim

I eat them everyday. Believe it or not, it cleared my blemishes and i dont bloat when nearing that time of the month.

U will need I chinese cabbage, daikon (raddish), carrots, fish sauce, 12 cloves of garlic, a big knob of ginger,sugar, cili giling or fine chili flakes and of course a handful of rough salt(garam kasar).

Oh yes.. a large plastic or glass container.

Cut cabbage lengthwise.. or wedge them. Wash and rinse in between the leaves. Then drain to remove excess water.

Prepare the salt.

Sprinkle a pinch in between the leave.. layer by layer. Once done, let it sit for 7 hours or so.

U will see that after 3 hours, the cabbage will begin to sweat and soften.

In the meantime, julienne the carrots, daikon.

Then blend garlic, ginger and add the chili paste.

I usually use cili powder.

Lots of garlic will be yummy. But dont over do it with the garlic.. otherwise it will turn 'starchy' during the fermentation.

Once the cabbage dah soft ( not too soft..u want some bite into it). Rinse the brine.. about 3 times and drain.

The blended paste, put 5 tablespoon of fish sauce, 4 tbsp of sugar.

Then lumur on to the cabbage... layer by layer. Mix it the the julienned carrots and daikon. Then, scatter some chopped spring onions.

Place it in an closed container and let it do its magic... fermentation.

Should be ready to eat in 2 days.

After the fermentation, just keep it in the fridge. Cut whenever u need to eat it.

The korean spice is actually cili flakes called kochigoru.

Tauhu Sambal Mak Zah (Sh.Halimah)

1. Tauhu potong 4 dan goreng. Set aside
2. Tumis cili kering yg dah blend
3. Masukkan garam dan gula kena lebih sikit
4. Campurkan sos cili lingam
5. Cili dah wangi masukkan tauhu tadi
6. Crush bawang goreng banyak2

Simple and sedap

Potato gratin - based on Nigella Lawson

4 med size potatoes - peeled, washed & sliced thinly with a mandolin
2 cloves of garlic - minced/finely chopped
1 small/med yellow onion - quartered & thinly sliced - can use the mandolin too
A pinch of salt
I used a box of lowfat milk + 1 small box (kid's size) of full cream milk

Shredded cheese - personal choices: mine is mozarella & cheddar

Put all the above into a pan and on med heat - let milk simmer and potatoes cook thru but not turn mushy

Place is a baking pan and baked at 180℃ until potatoes on top start turning golden. Sprinkle top with cheese and bake until cheese melts & golden brown.

Roast chicken - sifu Tati

Chicken
- whole or pieces (we like in halfs or quarters) with skin on

Marinade
- butter
- s&p
- rosemary
- lemon juice
- garlic
-- pulsed & marinate chicken for a few hours

Extra prep
- lemon slices
- big onions - wedges
- carrots - roughly chopped

Assembling
- in roasting pan, scatter lemon slices, onions & carrots
- place chicken on the veggies

Heat oven 200℃
Place roasting pan and bring down temp to 175℃ - roast till skin brown and crisps & chicken cooked

Serve with baking juice, onions & carrots. Take some to make gravy.

Gravy
- minced garlic - sauteed
- add flour
- add baking juice
- add oyster sauce, soy sauce, milk, s&p
- taste to yr liking

Donut gebu Nurpian04 & azlita aziz

Set A
500 gm bread flour
100 gm sugar
1 tsp salt
11 gm mauripan yeast (1packet)

Set B
4 egg yolks
200 ml water

Set C
100 gm margerine

1. Mix set A thoroughly.
2. Add set B and knead till becomes doughy and add in C, knead till smooth and elastic.
3. Rest for 10 mins & make into 25 balls.
4. Rest another 20 mins.
5. Flatten balls lightly & make holes in the middle and fry until cooked.

Make toppings you desire.

*note:
I made 1/2 the recipe. Really good & tasty. Can even make into 'sandwich Malaysia' or pau goreng kacang merah.

Murtabak mini mama 2016

Set A
Daging kisar digaul dgn rempah kurma.
Mayam bwg merah, bwg putih & halia skit.
Bwg holland - finely diced.
Minyak.

Panaskan minyak & tumis bwg merah, bwg putih & halia hingga layu kuning.
Masukkan bwg besar - goreng hingga layu & masukkan daging kisar.
Gaul rata & goreng hingga kering air daging & daging masak. Kalau masa goreng, kurang bau rempah kurma ... tambahkan rempah.
Masukkan garam skit - secukup rasa tapi jgn masin sgt sb later add salt lagi.
Semua masak - angkat & tapis/tos minyak.

Set B
Bahan2 lain:
Daun bwg chopped - byk
Bwg besar holand - diced finely or kasar ikut citarasa
Eggs (depends on how many murtabak u want to make. An egg for 1 murtabak)
Garam
Gula
Kulit popia frozen size besar

Assembling:

Utk 1 kulit popia besar, mix in a bowl:

2 sb bwg besar
2 sb daun bwg
2 sb daging
1 biji telur
secubit garam & secubit gula - gaul rata semuanya.

Letak inti ditengah sehelai popia & lipat dlm bentuk segiempat.

Panaskan minyak & goreng - bahagian lipat kpd minyak. Cucuk skit dgn garpu. Goreng sampai garing & flip to fry the other side. Angkat & letak atas kerta tisu - less oily.

Boleh buat 2 lapis.

Buat 2nd mixture. Letak ditengah popia. Ambk the 1st popia & letak atas 2nd mixture & lipat. Goreng bahagian lipatan dulu. Cucuk2 dgn garpu.

Kuih sagu @ bronok

1c sagu merah/putih
2.5c air
1/2c gula
1tbsp sirap ros
1 helai daun pandah
Kelapa parut
Garam

- didihkan air
- masukkan sagu
- kacau rata hingga biji putih hampir hilang
- masukkan gula, pandan & sirap ros - gaul rata
- masukkan semua ke dlm bekas & kukus utk 10-15min

Sementara itu ... kelapa parut + sedikit garam dan dikukus. Ini utk elak kuih basi.

Setelah dikukus, basahkan bekas/loyang & masukkan sagu tadi. Sejukkan sblm diletak dlm fridge supaya senang dipotong. Gaul dgn kelapa parut & hidang.

* tak perlu kukus. Boleh masak hingga sagu masak
*loyang dibasahkan supaya senang nak keluarkan
*keluarkan daun pandan sblm masuk loyang

Piza base tati

4 pizza base (Tati)
500gm breadflour
Abit of salt
3tsp instant yeast
2tbsp oil
1cair suam
1. Mix flour n salt. Disslove yeast dlm 1 cawan air suam
2. Masukkn oil dlm yeast mix. Pastu combine dgn tepung n salt td
3. Knead until the dough jadik elastic gitu
4. Buat bentuk ball n masukkn dlm oiled bowl. Cover dough. Leave it for 1 hr.
5. Preheat oven 180c.
6. Divide dough into 4, pastu roll or press2 pakai tangan buat round pizza. Pastu grease baking sheet n bubuh pizza n letak toppings
Bakar. After 20 mins dlm oven u check dh masak ke belum k. 15 mins pun bleh u check ya. Kalau oven u panas sgt, bleh reduce temp to 170c
Kalau u nak sikit, buah haf portion je pun cukup

Beefstick meatballs

Meatballs
- dgg kisar
- daun sup/bwg hiris halus
- bwg besar cincang
- garam
- pepper
- telur
- tpg gandum
(kalau buat burger, letak breadcrumbs)
- goreng masak tapi jgn garing sgt

Kuah
- tumis garlic ginger tumbuk
- add water
- add a dash of cinnamon
- tomato sauce
- kicap manis/masin
- add fresh tomatoes wedges + large diced big onion
- add capsicum, carrot, celery - celur
- secukup rasa & add cornflour slurry

Serikaya ubi

Sukatan guna mangkuk sup corelle.

1 mangkuk melimpah keledek parut
1 mangkuk santan pekat
12 biji telur sederhana
Gula merah pekat - 4 kerek + 1senduk gula pekat
Bunga cengkih 3-5 kuntum
Garam secukup rasa

- gaul nisae with eggs sebati tapi jgn dikepuk
- add in santan & garam skit
- mix well - jgn kepuk
- add in the ubi & cengkih
- kukus sampai semua bahagian naik
- angkat. Chilled. Serve cold 😋😋😋

Vietnamese salad/spring roll

i learned this at a cooking resort in Sg Penchala. i've misplaced the original recipe but will upload it as soon as i find it.

this is one delicious salad and i think can be changed into fresh spring rolls.

A. grilled chicken
1 chicken leg deboned
1 stalk lemon grass
2 cloves of garlic
1 tbsp brown sugar
1 tbsp oil (i used olive oil)
1 tbsp fish sauce

 B. salad dressing
1 clove garlic finely chopped
1 red cilipadi finely chopped (add if u want it hotter)
2 tbsp lime juice
2 tbsp fish sauce
1 tbsp water
1.5 tbsp brown sugar

C. salad
meehoon (my mom suggested soohoon would be good too)
1/2 carrot shredded
1/2 japanese cucumber shredded
a little bit of mint leaves - chopped/shredded
1 cup beansprouts (raw)
1 cup of shredded lettuce
1/4 cup coriander leaves (whole or roughly chopped)

method:
1. pat chicken dry, put in plastic bag & pound to flatten evenly.
2. prick a few places with tip of knife.
3. combine lemon grass, garlic, sugar, oil & fish sauce - blend into fine paste.
4. marinade chicken for at least 15mins.
5. cook on grill or fry in frying pan till cooked through (i did mine till abit crispy at the edges)
6. remove to a plate & cooled before cutting into 1cm slices. set aside.
7. combine salad dressing in a bowl & stir till sugar dissolves. set aside.
8. blanch meehoon or soohoon till tender but not mushy or 'al dente', drain & run under cold water & chill in fridge for a while before serving. (this is a cold salad)
9. get the salad ready.
10. to serve:
place a portion of meehoon/soohoon in individual bowls, top with the shredded carrots, lettuce, mint, cucumber, beansprouts. top with a few chicken pieces & coriander leaves. drizzle with just enough dressing to moisten the salad, toss all together & eat immediately. use chopsticks

No yeast pizza dough - dee's dapur

No YEAST Pizza Dough

Ingredients

2 1/4 cups all purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
1 cup milk
1/4 cup butter (room temperature)

Instructions

Preheat oven to 450 degrees. Line baking sheet with parchment paper, or prepare your pizza pan to your preference or instructions.
In large mixing bowl combine all ingredients, using dough hook mix on low speed until one ball of dough forms. (This can be made without a mixer, you will just stir until you have a ball of dough that forms)
Sprinkle flour onto a rolling pin and your hands, remove the ball of dough from the mixing bowl and pat down with flour to help form into a solid ball. Dough may be slightly sticky straight from the mixer.
Roll the dough into a ball and set onto the prepared baking sheet. Using the rolling pin coated with flour roll out the dough to desired thickness, mine was about 1/4 of an inch thick.
Top with desired toppings and bake for 10-12 minutes. Remove from oven, allow time to cool and enjoy!
