nasi beryani mama

2pot utk 3org makan (bandar); kampung 2org. anggaran & assuming it's men.


2 pot beras
2 1/4 air
(air 1 1/4 + 'yogurt' 1pot susu + air limau)
bwg besar mayam nipis
kayu manis & bunya lawang
garam

panaskan minyak & masukkan rempah kasar & bwg besar.

bwg layu, masukkan air. 
air didih, masukkan yogurt - ringgit didih. Masukkan beras & garam secukup rasa, gaul rata & tanak. - ini basic nasi beryani putih. 

Versi mama:
Tanak 1/2 cooked, pindah ke kukusan, layered with air saffron, kuah beryani + daun ketumbar & kukus hingga masak.

Arabic lentil soup (Hjh Farahiyah)

Arabic Lentil Soup (far)

Ingredients:
1 cup yellow lentils
2 tbs butter
1 onion, sliced
1 tomato, grated
1 tsp cumin powder
1/2 tsp chili flakes (optional)
3-4 cups chicken stock
juice of 1 lemon
salt and pepper to taste
coriander or parsley to garnish

Directions:
Rinse and soak lentils in water overnight. Drain the water out the next  In a pan, heat butter until it melts. Add onions and cook over medium heat until it JUST starts to caramelize. Add the lentils, tomato, cumin powder, chili flakes and stock. Boil for around half an hour or until the lentils are cooked. You can adjust the stock amount depending on how thick you want the soup to be. When cooked, run the soup in a blender until soup. season with salt, pepper and lemon.

rempah kerutuk 3-3.5 sudu lauk besar scoop besar

*tumis bahan kisar hingga garing
*masukkan rempah & air skit - tumis hingga garing & pecah minyak
*masukkan daging - kering air daging & pecah minyak
*masukkan santan - jgn tinggalkan hingga masak santan, then kecikkan api utk keringkan kuah skit.
*kuah hampir kering, masukkan kerisik

petua utk melembutkan daging keras, masukkan biji kurma - 1 biji je bg sekilo dgg. masukkan sblm di akhir masakan kalau dgg masih keras. jgn masuk awal kut dgg empuk sblm rempah & santan betul2 masak.
