Piza base tati

4 pizza base (Tati)
500gm breadflour
Abit of salt
3tsp instant yeast
2tbsp oil
1cair suam
1. Mix flour n salt. Disslove yeast dlm 1 cawan air suam
2. Masukkn oil dlm yeast mix. Pastu combine dgn tepung n salt td
3. Knead until the dough jadik elastic gitu
4. Buat bentuk ball n masukkn dlm oiled bowl. Cover dough. Leave it for 1 hr.
5. Preheat oven 180c.
6. Divide dough into 4, pastu roll or press2 pakai tangan buat round pizza. Pastu grease baking sheet n bubuh pizza n letak toppings
Bakar. After 20 mins dlm oven u check dh masak ke belum k. 15 mins pun bleh u check ya. Kalau oven u panas sgt, bleh reduce temp to 170c
Kalau u nak sikit, buah haf portion je pun cukup

- daun sup/bwg hiris halus
- bwg besar cincang
- garam
- pepper
- telur
- tpg gandum
(kalau buat burger, letak breadcrumbs)
- goreng masak tapi jgn garing sgt

Kuah
- tumis garlic ginger tumbuk
- add water
- add a dash of cinnamon
- tomato sauce
- kicap manis/masin
- add fresh tomatoes wedges + large diced big onion
- add capsicum, carrot, celery - celur
- secukup rasa & add cornflour slurry

Serikaya ubi

Sukatan guna mangkuk sup corelle.

1 mangkuk melimpah keledek parut
1 mangkuk santan pekat
12 biji telur sederhana
Gula merah pekat - 4 kerek + 1senduk gula pekat
Bunga cengkih 3-5 kuntum
Garam secukup rasa

- gaul nisae with eggs sebati tapi jgn dikepuk
- add in santan & garam skit
- mix well - jgn kepuk
- add in the ubi & cengkih
- kukus sampai semua bahagian naik
- angkat. Chilled. Serve cold 😋😋😋

Vietnamese salad/spring roll

i learned this at a cooking resort in Sg Penchala. i've misplaced the original recipe but will upload it as soon as i find it.

this is one delicious salad and i think can be changed into fresh spring rolls.

A. grilled chicken
1 chicken leg deboned
1 stalk lemon grass
2 cloves of garlic
1 tbsp brown sugar
1 tbsp oil (i used olive oil)
1 tbsp fish sauce

 B. salad dressing
1 clove garlic finely chopped
1 red cilipadi finely chopped (add if u want it hotter)
2 tbsp lime juice
2 tbsp fish sauce
1 tbsp water
1.5 tbsp brown sugar

C. salad
meehoon (my mom suggested soohoon would be good too)
1/2 carrot shredded
1/2 japanese cucumber shredded
a little bit of mint leaves - chopped/shredded
1 cup beansprouts (raw)
1 cup of shredded lettuce
1/4 cup coriander leaves (whole or roughly chopped)

method:
1. pat chicken dry, put in plastic bag & pound to flatten evenly.
2. prick a few places with tip of knife.
3. combine lemon grass, garlic, sugar, oil & fish sauce - blend into fine paste.
4. marinade chicken for at least 15mins.
5. cook on grill or fry in frying pan till cooked through (i did mine till abit crispy at the edges)
6. remove to a plate & cooled before cutting into 1cm slices. set aside.
7. combine salad dressing in a bowl & stir till sugar dissolves. set aside.
8. blanch meehoon or soohoon till tender but not mushy or 'al dente', drain & run under cold water & chill in fridge for a while before serving. (this is a cold salad)
9. get the salad ready.
10. to serve:
place a portion of meehoon/soohoon in individual bowls, top with the shredded carrots, lettuce, mint, cucumber, beansprouts. top with a few chicken pieces & coriander leaves. drizzle with just enough dressing to moisten the salad, toss all together & eat immediately. use chopsticks

No yeast pizza dough - dee's dapur

No YEAST Pizza Dough

Ingredients

2 1/4 cups all purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
1 cup milk
1/4 cup butter (room temperature)

Instructions

Preheat oven to 450 degrees. Line baking sheet with parchment paper, or prepare your pizza pan to your preference or instructions.
In large mixing bowl combine all ingredients, using dough hook mix on low speed until one ball of dough forms. (This can be made without a mixer, you will just stir until you have a ball of dough that forms)
Sprinkle flour onto a rolling pin and your hands, remove the ball of dough from the mixing bowl and pat down with flour to help form into a solid ball. Dough may be slightly sticky straight from the mixer.
Roll the dough into a ball and set onto the prepared baking sheet. Using the rolling pin coated with flour roll out the dough to desired thickness, mine was about 1/4 of an inch thick.
Top with desired toppings and bake for 10-12 minutes. Remove from oven, allow time to cool and enjoy!

Rebus semua bahan ni dgn asam keping, garam & sedikit gula (jgn rasa manis) sampai masak dan secukup rasa.
Kemudian masukkan ikan, kcg bende & terung. Sblm nak angkat masuk daun kesum.

Makaroni bakar aunty Lah & mama

Makaroni bakar:
500 grm makaroni
Tomatos saus
5 biji telor
1 tin susu
1 tin air
Daun sup.
250 gm daging
Bawang goring
2 labu bwg besar
Tmis daging dgn bwg besar masak dging masuk  3/4 cup tomato saus. Masak ketepikan.
Rebus makaroni, masak tos kering. Bancuh susu; telor dn air.
Gaul daging dgn makaroni, bawang goring; daun sup hiris, cili hiris. Nasuk dlm mangkuk pembakar dn tuan campuran susu tlor nair td. Bakar sampai masak.
Ktinggalan: masuk sedikit cili boh dlm dging

Apple Slice Cake

Apple Slice Cake

Ingredients:
2 cups self raising flour, leveled & sieved (Nona)
3 apples - peeled & diced (south African/NZ huge green apples 2apples @ 3 normal granny smith apples)
1 cup sugar (just about, 1c is too sweet)
130 gm salted butter (SCS salted butter) - melted n cooled.
1 egg jumbo size - room temperature
1/4tsp of vanilla essence/extract

Method:

Mix well dry ingredients - apples, sugar & flour in a bowl.
Mix wet ingredients - melted butter, egg & vanilla essence, whisk lightly to combine in another bowl.
Combine and mix well the dry & wet ingredients.
Spoon into a greased & lined cake tin.
Baked at 180-200deg for 35-40mins or until top is golden brown & inserted skewer comes out clean.

Cake lasts for 3 days in fridge. Serve warm with icecream or eaten chilled.

Translation:

Bahan2:
2 c tepung self raising flour (Nona)
3 epal hijau granny smith - buang kulit & didadu kecil
1 c gula (1c manis sgt, nak kurangkan skit pun boleh tapi jgn kurang dari 3/4c - tak cukup manis)
130 gm butter (SCS salted butter - dicairkan)
1 telur gred A @ jumbo size - tidak sejuk - suhu bilik
1/4 st of vanilla esen/ekstrak

Cara2:
Satukan & gaul rata bahan2 kering - tepung, gula & epal dlm 1 mangkuk besar.
Satukan bahan2 basah - butter cair, telur & esen vanila dlm mangkuk lain. Kepuk skit nak sebatikan aje.
Kemudian satukan bahan kering & basah hingga sebati dan masukkan ke dlm bekas utk dibakar. Sapu butter & tepung dibahagian dlm bekas dahulu atau letak kertas minyak.

Panaskan oven 200C sekejap & bakar cake pd suhu 180C selama 35-40 min atau sehingga permukaan atas 'golden brown'. Cucuk batang satay @ pisau dibeberapa tempat utk pastikan cake masak.

Boleh makan dgn icecream. Bila sejuk boleh simpan dlm fridge. Tahan 3 hari. Makan sejuk pun sedap or panaskan dlm microwave.

Tuna melts Dietlicious

Tuna Melts Recipe
1/2 muffin 160++cal

-Wholemeal English Muffin  (frozen ada jual) cut to 2
-Ketchup(heinz) or pasta sauce sapu 1 layer kt atas roti
-Tuna in mineral water (drain)
- celery (chopped)
- parsley (chopped)
- cili flakes or.cili padi
- shallot (chopped)
- sour cream or greek yogurt
- salt
- honey or fructose (sikit je)
- b.pepper
- lime

Mix all ingredients and spread to each bread (1 1/2 tbps)
Topped with low fat mozarella
Cover with slice tomatoes
Sprinkle dry oregano and b.pepper
Baked for 15 minits or until chesse melted.

Sayur lemak

3-4 org makan
Kelapa parut 1/2 biji (besar) @ 1 biji (kecik)
Perah santan pekat 1cwn air. 2c air utk santan biasa. Kalau x cukup kuah - perah santan lagi or tambah air.
Mayam bwg merah 3-4 biji, garlic 1-2biji, cili merah 5-8 hiris
Pemanis - bilis or udang
Sayur choices:
Terung + kcg panjang
Sawi putih, hijau, carrot
Kcg saja

Masuk semua dlm periuk - masak sampai menggelegak. Once boiled, kecikkan api and masak sampai sayur masak. Regularly stir sb taknak santan separate dari air. Add salt to taste.

Rohani Jelani mac & cheese

Mac & Cheese with (smoked) sausage & broccoli

1tbsp oil
1spicy beef, smokey chicken or any sausages, sliced 1cm thick
1cup broccoli florets
160g macaroni or any short pasta
2L water
2tsp salt

Cheese sauce:
40gm butter
1/4c or 30gm plain flour
600ml milk
1/2 bay leaf
50ml whipping cream
1/2tsp salt
1/4tsp ground white pepper
120h grated cheese (80g cheddar, 40g mozarella) (optional: 1-2 tbsp freshly grated parmesan)

Method:
1. Heat oil in a small pan and fry the sliced sausages until lightly browned. Set aside.

2. Boil 2 litres of water with 2tsp salt. Blanch broccoli for 1min. Remove, run under cold water & strain. Set aside.

3. Add macaroni to the boiling water and cook for 10mins till just cooked but not overcooked. Aldente.

4. While macaroni cooking, preheat oven 200°c and essemble yr sauce.

5. Melt butter in a medium saucepan and stir in flour to the butter. Quickly mix well, pour in milk and bring to a boil - stir constantly to prevent lumps forming. Add bay leaf and simmer for another 2-3mins before adding cream, keep stirring. Aeason with salt & white pepper and take pan off heat. Discard bay leaf.

6. Quickly combine the cooked macaroni, broccoli, sausages, white sauce and 2/3 of the grated cheese mix. (If your sauce is in a big pan, combine in the same pan.)

7. Transfer into a heatproof dish, scatter remaining cheese and bake in preheated oven for 20-30mins until top is golden brown. Serve immediately.

Minced meat
3 minced - celery, carrot & big onion
Minced garlic
Pasta/bolognese sauce - Prego @ Kimball
Bolognese herbs
Shredded mozzarela cheese (into sauce & on top of sauce)
Oil for frying
Sugar & salt
Water 1/4cup
Veggies optional

- prepare pasta aldente
- heat oil & fry minced garlic, celery, carrot & big onion till fragrant
- add minced meat n water - cook till meat is well done and warer evaporated
- add pasta sauce & pasta herbs, add sugar & salt to taste & cook till sauce is done.
- add pasta - mix well, half way add shredded cheese (save some for topping)
- once all mixed well ...put into baking dish, sprinkle cheese & bake for awhile till cheese melts & crisps
